Ingredients
  • 1 package capellini pasta
  • 2 cans of fire-roasted diced tomatoes
  • 2-3 Zucchini squash
  • Olive oil
  • Raw shrimp
  • Cajun seasoning
Instructions
  1. Boil Pasta in a large stock pot.
  2. Put a grill pan on the stove top and start letting it get very hot.
  3. Prepare shrimp by putting them on soaked skewers. (you can skip the skewer step, I do this really to make the flipping process easier, and I just like how it looks).
  4. Sprinkle cajun seasoning over shrimp.
  5. Prepare zucchini by washing, quartering lengthwise, then chopping into ½ inch pieces.
  6. Begin cooking over med-high heat in a sauté pan ~5 minutes or until your desired texture; no oil needed.
  7. Add the shrimp to the very hot grill pan for 3-4 minutes, you will see them begin to turn pink.
  8. Flip, cook another 2-3 minutes and remove from heat.
  9. If you wish you can toss them in olive oil to finish.
  10. Once pasta is cooked drain and reserve ½ cup of the cooking water.
  11. Add pasta back to pot with reserved water, the diced tomatoes, the prepared zucchini, and olive oil to keep pasta from sticking.
  12. Serve with shrimp on top.
