Golden Curry Chicken SaladGolden Curry Chicken Salad is a great and healthy way to jazz up your chicken this week. It does not contain any mayonnaise- it uses fat free Greek yogurt. This avoids bad fats and adds protein. The walnuts add Omega-3 fatty acids, the essential fatty acid that Americans don’t eat enough of! The raisins add a sweetness to the spice of the curry.

You can put this on a sandwich, over a salad, in a wrap, in lettuce cups- anyway you can imagine it! Have it for dinner or lunch, a picnic, or a side dish! It’s a popular dish that you can find at fancy restaurants, delis, and now you can make it at home! Give this Golden Chicken Curry Salad a try.

Ingredients
  1. 1 ½ cup shredded chicken breast
  2. ½ white onion diced
  3. ½ cup plain fat free Greek yogurt
  4. ¼ cup golden raisins
  5. ½, cup raw walnuts
  6. 1 ½ TBS curry powder
  7. ½ tsp salt
  8. ¼ tsp garlic powder
  9. Pepper to taste
Instructions
  1. Mix together yogurt and spices
  2. Combine all ingredients with the yogurt mixture
  3. Adjust spices to your preference
  4. Serve chilled
