Grilled Veg and Orzo Salad

Grilled vegetable and orzo salad. Can be a great side dish or a main dish.
Ingredients
  • 3 yellow zucchini
  • 1 green zucchini
  • 2 small onions
  • 2 small eggplants
  • 1 large tomato
  • 4 cloves of garlic
  • Olive oil
  • 2 cups of orzo
  • 4 cups of veggie stock or 2 veg bouillon cubes
  • Juice of 2 lemons
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
Instructions
  1. Preheat oven to 400 degrees.
  2. Boil vegetable stock or 2 vegetable stock cubes in 4 cups of water.
  3. Add orzo to boiling liquid and cook covered just until liquid is MOSTLY gone- 10-15 minutes. The starch from the orzo will combine with the left over liquid to make a creamy texture.
  4. Depulp tomato by cutting it and pushing seeds out with fingers then cut it into bite sized pieces.
  5. Peel and cut garlic in half.
  6. Add tomato and garlic to a baking dish, toss in a light coat of olive oil, and season with salt and pepper.
  7. Bake tomato mixture for about 20 minutes.
  8. Mince the garlic once roasted.
  9. Cut your zucchinis and eggplant into spheres to grill.
  10. Lightly brush with olive oil and season with salt and pepper.
  11. Grill until tender and grill marks appear, then chop into bite sized pieces.
  12. Cut the ends off your onions, peel it, and then quarter it.
  13. Grill or roast your onions.
  14. Juice two lemons and add 3 TBS of olive oil to the juice. Season the dressing with salt, pepper, and garlic powder.
  15. Now combine all ingredients in a bowl, taste and adjust seasonings, and enjoy it while it is still warm.
