Fattoush

 

Have you ever had or heard of fattoush? It sure is fun to say, isn’t it? My first experience with the wonder that is fattoush was during my dietetic internship. My self and three other interns had to host a theme meal. We decided to do a Mediterranean themed meal because there are so many healthy options to choose from with the theme. Fattoush was one of the dishes we made and it stuck with me. I don’t remember the exact recipe but what I make at home is similar.

Fattoush is basically a salad with bread in it. Man is this amazing. Every time I eat it I say out loud- “this is so fresh it’s amazing.” I think it’s the mixture of the cucumber and fresh mint. You’ve got to try this one!

1 cup diced tomato
1 cup peeled and diced cucumber
½ small red onion diced
2 cups thinly chopped romaine lettuce
1 lemon
3 TBS olive oil
5 TBS chopped fresh mint
3- 6 inch whole wheat flat breads or 2 pitas divided

First preheat your oven to 350 degrees. Cut your flat bread into small pieces of whatever shape you desire. Line a baking sheet with aluminum foil (for easy cleaning) and spray it with olive oil cooking spray. Place the bread on the cooking sheet and lightly spray the top of the bread with cooking spray as well. If you use pita bread, cut the bread in half and then separate the bread from the inside out (the pocket) and cut it into smaller pieces before putting it on the pan. Toast it in the over 5-10 minutes depending on how dry the bread is that you use. You just want to dry it out a bit and lightly toast it.

Dice tomatoes and cucumbers into similar ¼ inch sized pieces. If you are using a larger variety tomato, depulp it first by cutting the top off and sticking your index finger in the holes where the pulp is. Dice ½ of a small red onion. Chop your romaine into thin strips, similar to shredded lettuce.

Juice 1 lemon, add the olive oil, pepper, and fresh mint.
